  Roast Fish with Minted Pea Puree

Serves 4

Ingredients

  • 4 medium white fish fillets (whiting, haddock, cod, john dory, plaice etc)
  • 200g frozen peas
  • Handful fresh mint leaves – roughly chopped
  • 1 teaspoon butter
  • 2 tablespoons flour
  • Salt and pepper

To Cook

To make the pea puree, cook the peas according to the instructions on the pack.

Place in a blender with the mint, butter and a little salt and pepper. Blend quickly until desired consistency. If the mixture is too thick add a little milk or cream. Set aside and keep warm.

(If you do not have a blender you can mash the peas with a potato masher or fork and add in the chopped mint, for a more firmly textured mix)

Dust the fish fillets with a little seasoned flour, and shake off any excess. Heat the oil in a pan and add fish. Turn once during cooking. Cook in the pan or in the oven until golden brown.

Remove fish from the pan and place on top of the peas.

Serving Suggestions

Baby potatoes and fresh vegetables.

Whole Stuffed Plaice

Small flat fish are ideal for serving whole with a stuffing. Choose plaice, dabs, lemon sole, white sole or megrim. Allow one fish per person.

Ingredients

  • Stuffing: Tomato, Onion and Herb
  • Mix together finely chopped tomatoes, onion and thyme (or herb of your choice). Season.
  • Courgette, Ham and Dill: Mix together finely diced courgette, cooked ham and dill (or herb of your choice) and seasoning.
  • Mushroom, Onion, Brown Crumbs: Mix together sliced mushrooms, chopped onion, parsley and brown bread crumbs. Bind with a little melted butter.

Method

To prepare the fish use a sharp knife remove the head. Cut from top to tail of the fish in as far as the bone. Now cut towards each side to make a pocket.

Fill the pocket with the stuffing of your choice. Brush with melted butter.
Cook the fish in a moderate oven 190°C/350°F/Gas 5 for 12-15 minutes.
Serve with finely chopped herbs.

Plaice Fillets with Bundles of Vegetables

Ingredients

  • 700g plaice – filleted and skinned
  • Selection of seasonal vegetables – cut in julienne strips
  • Olive oil
  • Lemon or lime slices
  • Bay leaves
  • Salt and freshly milled black pepper.

Method

Place vegetables in a lightly oiled micro-waveable dish and cook on a medium setting for 2 minutes.
Season fish fillets. Arrange vegetable strips on each fillet and roll up.
Scatter bay leaves and lemon or lime slices over the fish.
Cover and microwave on medium setting for 6 minutes. Allow to stand for 2 minutes before serving.
