Plaice fillets with veggie bundles

Serves 4
Ingredients
700g plaice – filleted and skinned
Selection of seasonal vegetables – cut in julienne strips
Olive oil
Lemon or lime slices
Bay leaves
Salt and freshly milled black pepper

Method
Place vegetables in a lightly oiled micro-waveable dish and cook on a medium setting for 2 minutes.
Season fish fillets. Arrange vegetable strips on each fillet and roll up.
Scatter bay leaves and lemon or lime slices over the fish.
Cover and microwave on medium setting for 6 minutes. Allow to stand for 2 minutes before serving.
