Award-winning smoked mackerel and potato salad

Ingredients:

  • 400g of boiled and cold baby potatoes
  • 1 fennel (grated)
  • 1/2 red onion (finely diced)
  • 1 green apple (grated)
  • 50g of chopped chives
  • 50g of chopped dill
  • 50g of chopped parsley
  • 80g of mayonnaise
  • 25g of dijon mustard
  • Juice and zest of 1 lemon
  • 4 fillets of Kish Fish Award-Winning Smoked Mackerel (skinless and bones cut out)
  • Fresh herbs (garnish)
  • Apple sticks (garnish)
  • Sliced red onion (garnish)
  • Salt and pepper to taste

Dressing:

  • Mix mayo, mustard, lemon juice and zest together and season to taste with salt and pepper.

Salad:

Cut potatoes in half (larger potatoes in quarters) and mix with shredded fennel, apple, finely diced red onions and chopped herbs (keep a few herbs back for garnish). Coat evenly salad with the dressing. To make apple sticks, cut the apple into slices and then cut each slice into thin strips, keep apple sticks in cold water with lemon juice to preserve the color.

 

Kish Fish Award-Winning Smoked Mackerel:

  • Remove the skin and cut the bones out of each fillet and cut them up into 1-inch chunks.

 

Finishing the salad:

Put dressed potato salad in the bowl, arrange chunks of mackerel, garnish with fresh herbs, apple sticks and thinly sliced red onion. Serve with a lemon wedge.
